I have a celeron with an on-board video card... If i want to change the card can this be done? what do I need to do to make sure this doesn't fuck up my machine? Is it as simple as disabling the old videocard since it cannot actualy be removed? Also how do I determine if its AGP or PCI?

You can disable the onboard video in the BIOS. Then just pop in a regular video card and you're set.
