Vegetables you hate

pickled beets are the BOMB but regular beets, now just seem to me like they want to be pickled. scream for it. pour some vinegar on me!

They're as good if not better roasted with garlic and rosemary in EVOO.


As for pickled - i julienne them and blanch them in vinegar and spices every week and keep it in the fridge to toss on salads and sandwhiches

The trick with eggplant is to let it sit for a while so the water drains out of it so it isn't so mushy when you bake it. Eggplant rocks too!

I don't think there is any particular veggie I don't like, except for mushrooms because they grow in poo.

Best to do more then let it sit. You want to sprinkle it with salt, and layer it between paper towels/tea towels.

Even better if you can get something with heavy weight and press it. (i'll put them between cookie sheets with a kettle bell on top, but have used a cast iron pan + mixing bowl with water for weight)

Will result in a much firmer/less slimey egg plant. Way better for Eggplant Parmesan and stir fries.

Please suggest Kale recipes!

I don't like prepping/cooking beets, the stain is pretty nasty.

If you cut a beet in half and boil it, the peel comes right off after it's cooked. Medium boil for about 30 minutes for a medium beet. Then chop on a bamboo cutting board with a sharp knife. No staining or splashing.

I LOVE beet shoots. Bunched beets are great because I like those more than the beet itself.

I find beets need some kinda of citrus, a nut and a cheese like goat cheese.
I boil beets, peel, cut into chunks. Toss it with arugula, pine nuts, a little basil, pancetta bits. Dressing is oil, a little balsamic and squeeze half a grapefruit. Top with a disc of breaded fried goat cheese. Can toss a few peeled wedges of grapefruit in there. Works with golden beets too.

Don't hate any. Just depends on how they are prepared. For example, I won't eat beets, but I love borscht. I'm not a huge fan of cooked spinach, but love spinach salad.

Try only buying small zucchinis, slicing them in thin rounds, sprinkling with salt to remove moisture, and frying up on fairly high heat with garlic. Good every time.

Or you can go the opposite route and make zucchini bread.

I love almost all veggies. But for some very odd reason I hate cucumbers. They taste like fowl water to me, some sort of putrid water from Mexico or India that's going to make me very sick. I've always hated them. But I love Zucchinis?


Can only eat cooked mushrooms. And big ones need to be cut up for me). Besides that love all veggies. Fruit, now that's a whole other can of worms, I detest many varieties.

I eat literally 0 fruit.

It's more of a rarity. I find that when I eat fruit, my throat goes all scratchy. And the worst thing is eating a non-ripe piece of fruit. Ick.

The only way I get fruit in me is via flavoured shisha tabbacco.
