Prepping the bacon for extra smoking. THis is the excellent bacon I get from the Mennonites in Elmira.
It is already double smoked, but I am going to smoke it for another 10 hours. I still have some wood from 100 year old barns that a friend gave me last year, beech and cherry wood chunks which have been soaking in water for a couple of days so they don't fully ignite.
Toronto City Parks person just told me they are spraying the electrical box for wasps tonight. Yay! I got a hell of a sting when I plugged in the system last year, but I still loved last year's TBQ, even with a hand the size of a large ham!
Since I am on somewhat of a health kick, I have decided just to bring a 2 1/2 inch thick New York strip instead of my usual small prime rib roast. I may even bring some kind of veg: maybe a salad... THe bacon will be the antidote for the veg however
