I believe the big priority for Kang was to fight in the Spirit FC promotion once a year in Korea where he's heralded as a bit of a national hero despite growing up in Vancouver. This is something that UFC obviously wouldn't allow.
Of course back then, he could make a healthy living fighting in Pride/Dream as well.
Also, in an interview when Pride was first purchased, Dana White publically said that he didn't consider Kang a top fighter (this was when Kang was still considered top 5 MW by many).
I think the fact that Dream is no longer doing as well, coupled with a couple of tough losses at the time led him to sign with UFC. I also randomly ran into Dennis Kang at a restaurant here in Van a little while back and i'll be honest - i eavesdropped a little :O and it sounded like he wasn't too happy with FEG - but take that as pure unsubstantiated gossip

I also suspect that UFC is really looking to make a push into South Korea in the next little while (asia in general actually) and it just makes smart business sense to sign someone who's huge in Korea (coupled with the recent Dong Hyun Kim signing).
I really like Kang but he's a little inconsistent - when he's on I think he's capable of being near the top, but he seems to make some mistakes that end up costing him matches (Akiyama, Mousassi).
