Spices?

What spices would you think best suit a white wine vinnegrette?

making something crazy for dinner tonight and I would like it to come out nicely.

I'd suggest a good balsamic vinegar a touch of wine and some dijon mustard to balace it all off.

remember to shake it before you dress it ;)

If you're making something crazy... then how about a vinagrette with cream of tartar and saffron. That's pretty crazy.

What's in your salad and what are you serving for dinner?

Half of it is going to marinade the chicken breast and veggies while the other half is going to dress the pasta.

That sounds awesome. You think I can get away with a honey dijon?

It's a pasta salade and the chicken and veggies are mixed in with it. So I was hoping to combine both.

Oh I know how to do all of that, I was jsut wondering what kind of spices to use to make this really flvourful. You're not talking to a rookie here! Just wanted to do something different for a change!

I don't know how you're cooking the chicken, or what the veggies are... but perhaps thyme and rosemary might be a starting point.

together or choose one. either way I love Thyme and rosemary!

For chicken I often use fresh rosemary, lemon thyme and sage. It always tastes irresistably better from an actual herb garden. This is for a whole, roasted chicken, mind you, so the flavours can be readily absorbed into the meat while cooking. If it's just a chicken breast or marinade you're after then this combo prolly wouldn't turn out well, depending how you're preparing it.

Using the same marinade for the chicken and the salad might make the dinner's flavour a bit too uniform, maybe?

I guess by now you're probably already eating it though.

Anyhoo, can't wait till spring so I can grow my herb garden again.

I find that chciken goes very well with tarragon, so i would use

white wine
balsamic vinegar
sugar
garlic
tarragon
thyme
salt pepper
lemon juice.

Marinate with this and then reduce it to thicken for a dressing, maybe using some single cream.
