My zuccinis are out of control! Every day there are more and more...

I have to figure out ways to cook all these damned zuccinis! My plants are producing shit loads and I need recipes to use them up..

Many of the online recipes call for 1/2 cup - 2 cups of zuccini... I need recipes that can use way more than that!

Any recipe ideas for zuccinis that use a lot of them?

I grew some last year but this year it is just insane! I pick the all and the next morning there are massive 14" ones that have magically grown overnight!

Aren't there a ton of Italian and Greek recipes that take a big pile of diced onions/carrots/zuchinni as the basis for veggies in nice oven baked dishes??
