Easy dinner to impress a girl with!?

Hi...

So i'm cooking for girl and usually this ends in a disaster... so thought i'd ask for some advice:

She prefers a 'balanced meal', especially if it is strongly leaning in the veggie direction, but doesn't eat anything in the meat department

I'm serving a nice red Blackstone with dinner, if that makes a difference, and was hoping for something fairly simple-ish...

Anyone got a fool-proof recipe? *fingers crossed*

ignoring the fact that you cant have a balanced meal leaning in the veggie direction (leaning makes it less balanced!)....

pasta is usually pretty easy. I'd make something simple and rustic.

Y'know, I wanted to say something but I know people here are friends in real life and I didn't want to piss any of you off.

But I thought the Guy Stuff Forum was partly created so we could have violent, pornographic and rather alcohol-centric threads without the whining, constant attempts at sharing feelings, and shopping queries that happen in the Girl Stuff Forum. When ChrisD posts in here, he usually makes whatever the topic all about cooking. Some of the other guys do it too but he's the one who seems to pop up the most.

Honestly, when I'm reading a thread and then I see a post like that, I usually abandon it. I find it creepy too, and downright disrespectful. Can we not have some kind of a refuge from the recipies? There's enough of it in the General Forum and on the rest of the internet, for that matter.

Sorry for posting it here...I didn't know if I should start a new thread or not, but I couldn't resist.

Oh and if we've learned anything from the other threads on this forum, it's that vegans have rotten asses, so you should dump her before she dumps in your vicinity.

it doesn't really matter what you make (of course avoid allergens and dislikes) so long as you make it together! Invite her over get her to help w/ prep, salad, watever...

She may even end up doing your dishes!

veggie dishes that impress - anyone?

take into account, Im a meat and tatters kinda guy, and need something that will not only taste great, but filling too!

Ok to actually follow the topic...

We've been doing the G.I. thing lately and we had a really good recipe with lentil mash instead of potatoes - nice and flavourful and it fills you up like potatoes do as well. Lots of recipes for this kind of thing online.

With that you could do a veggie stir-fry in bean sauce..

Coconut steamed rice if you have a rice cooker (replace half the water with light coconut milk)

Extra-firm tofu - toss it in with the veg to add protein.

And then some kind of mousse for dessert?

I echo the make her help you idea. Much more fun for her and you get to touch eachother a lot as you move around the kitchen, handing things between you, tasting spoons/fingers, etc.

Actually thats a great suggestion - looks great. I just find after a "veggie" meal, Im always hungry soon after. Its almost as though its missing something?

yeah but after a vegetarian meal you know, because the girl's crazy anyway (being vegetarian) that you're going to be eating pinkmeat later for sure so what's the worry? Feed her the nuts and berries! And then feed her the nuts and berries!

i think you should clean the house, set up a candlelight dinner, be ready to pour her a bath after dinner and then get out of the house and leave her be :p

isn't that what all women really want? some peace and quiet?

Starter - Squash soup

In a pot take diced butternut squash and cover in water, light boil for an hour with a veggie broth cube, throw in a stick or two of cinnamon and a little honey or brown sugar. Once when everything is soft remove the cinnamon stick and throw it in a blender. Blend it with some cream or soymilk (just enough to make it have a creamy texture). Serve with a dash of fresh pepper and a bay leaf if you have it.

Main...

Nuke or boil 2 cups of water with some veggie cubes.

Buy 2 zucchini one green and one yellow. You only want the skin so buy ones that look nice. Slice off the skin and cut it into long thin strips kinda like pasta.

Buy 2 good looking Portobello mushrooms you only need the tops. Cover with pressed garlic and some olive oil, broil in your oven until they soften up.

Take 1 cup of CousCous and add 1 cup of the veggie broth you made earlier, toss in some raisins if you have them kicking around. Let sit for ten minutes.

Take you zucchini skin that you sliced earlier and in a frying pan fry it in about a 1/4 cup of the remaining veggie broth.

On a plate arrange a mound of the CousCous, on top of it goes Zucchini and on top of that the Portobello mushroom cut into 4 or 5 large peaces.

Take remaining veggie stock and boil it at high temp in a frying pan, as it reduces add a little balsamic vinegar or a splash of red wine.

Drizzle the 'reduction' over the pile on the plate.


Desert

Cut up some oranges into 6 or 8, lightly sprinkle with some cinnamon and serve with a side of yogurt.

If you’re looking for something less formal I've had some great response with my grilled cheese (no joke). Use a nice loaf of bread, use decent brie and add some thin sliced avocado to it. Grill both sides and serve with a green salad and a good balsamic salad dressing.
